District 7 is one of seventeen grape crush districts in California, and has the longest growing season of them all. Longer time on the vine means the grapes ripen slowly and evenly resulting in vibrant fruit, complex flavours and excellent structure.
District 7 Chardonnay is a focused, elegant wine that strikes the perfect balance between rich and refreshing. Aromas of vanilla, orange blossom, and yellow delicious apple complement the judicious use of oak. Lush and ripe flavors of pineapple, Asian pear, vanilla and citrus finish with a hint of creamy, honeyed oak. Medium bodied and crisp acidity balanced with a rich lingering fruit finish.
The long growing season of District 7 allows the winemaker to “let it hang”. Longer time on the vine means the grapes ripen slowly and evenly. Deciding when to harvest is all about finding the sweet spot, that perfect moment when the grapes have reached full flavor development. The result is vibrant fruit, complex flavors and excellent structure.
Upon arrival at the winery, the grapes were gently whole-cluster pressed, chilled, and racked clean to a refrigerated stainless steel tank. The juice was slowly fermented at a cool temperature to enhance the varietal aromatics. They strive for a rich yet refreshing flavour profiile, achieved through a combination of stainless steel and oak fermentation. The result is a fresh and vibrant wine that allows the natural fllavor of the grape to shine.
With each vintage, the Scheid family strives to craft a Chardonnay that strikes a perfect balance between rich and refreshing. We would pair this wine with grilled seafood - it sings with lobster and grilled chicken.
